Well its that time of year in Bulgaria where figs should all be ready for harvesting and here is an idea for a wondeful jam. Its a great recipe that was given to me by a friend some years ago and I have tried it and its well worth it g

Fig Jam With Cinnamon


* 2.2 lbs (1 kg) of very ripe purple figs
* 1 lb (500 g) of sugar
* 1 vanilla bean
* 1 cinnamon stick
* 1 strip of lemon peel
* Jam pot


1. Clean figs and remove stems. Cut figs in quarters and place them in layers in a terrine.
2. Sprinkle fig pcs with sugar.
3. Using a small kitchen knife, remove vanilla from bean and add in to terrine.
4. Also add in cinnamon stick and strip of lemon peel to the fruit in the terrine.
5. Let terrine rest for 2 hrs, till figs have absorbed sugar.
6. After rest period, pour contents of terrine into jam pot.
7. Stir well and bring to a boil over high heat.
8. As soon as mix boils, cook over medium heat for 5 to 8 min, stirring the fruit constantly.
9. Just before end of cooking, you may crush hard figs with a fork for even consistency.
10. Test on cool plate to check cooking time before putting into jars.


You can have this with your toast, or served with a good chunk of cheese and even with Icecream.
